‘Nduja With Mussels

Servings:  2 people

Time:  10 minutes

Ingredients

  • 1 tbsp lard
  • 1 banana shallot finely diced
  • 100g ‘nduja
  • 1kg mussels
  • 50ml white wine
  • 150ml double cream
  • Juice of ½ lemon
  • Small bunch coriander roughly chopped
  • Pepper to taste

Method

  1. Heat the lard in a pan and fry the shallot until soft and translucent
  2. Add the ‘nduja and stir until it loosens and begins to fry
  3. Pour in the cleaned mussels and stir well to combine
  4. Pour in the wine and place a lid on the pan and leave for 3-4 minutes.  Lift the lid, stir and allow to reduce for another minute.
  5. Pour in and stir through the cream and lemon juice. 
  6. Pour into a large bowl, grind over some black pepper, scatter with the coriander leaves and serve
