‘Nduja With Mussels

Ingredients
- 1 tbsp lard
- 1 banana shallot finely diced
- 100g ‘nduja
- 1kg mussels
- 50ml white wine
- 150ml double cream
- Juice of ½ lemon
- Small bunch coriander roughly chopped
- Pepper to taste
Method
- Heat the lard in a pan and fry the shallot until soft and translucent
- Add the ‘nduja and stir until it loosens and begins to fry
- Pour in the cleaned mussels and stir well to combine
- Pour in the wine and place a lid on the pan and leave for 3-4 minutes. Lift the lid, stir and allow to reduce for another minute.
- Pour in and stir through the cream and lemon juice.
- Pour into a large bowl, grind over some black pepper, scatter with the coriander leaves and serve
